When the weather gets warmer sometimes I need a break from the regular breakfast routine of eggs, veggies, beans or almond flour pancakes. Veggie juices and smoothies are great but sometimes I want something to chew instead of drink. This coconut breakfast porridge is slightly sweet, satisfying, and refreshing. It is also packed with lots of great vitamins, minerals, and fats which is part of the reason why its so satisfying. Coconut milk is a great alternative to dairy and it gives a nice creamy taste and texture. The coconut oil is great for the brain, it’s even been said it is a preventative for Alzheimer’s disease. The flax seeds give you the added benefit of Omega 3′s which help fight inflammation and promote healthy digestion.

Cool Coconut Breakfast Porridge

  • 1 organic apple
  • 5 large ripe strawberries
  • 2 ½ cups coconut milk
  • 1 tbsp. coconut oil
  • 1 tbsp. ground flax seeds
  • ½ cup raw pecans
  • ½ tsp vanilla extract
  • Pinch of sea salt
  • Pinch of cinnamon

Wash, core and rough chop the apple. Wash and top the strawberries. Place fruit and all other ingredients into your blender and pulse to desired texture.

I only pulse the food processor a few times because I love this porridge chunky. Try it out yourself and see what txture you prefer. Hope you enjoy!
