Paleo Double Chocolate Cupcakes

Lately, we have been eating a more Paleo style diet and I find it makes me feel great. Limiting grains in my diet has helped a lot with my energy level and digestion. My daughter has been asking for cupcakes so we made these for Halloween (a little late though due to losing power in Hurricane Sandy). These came out great and I would definitely make them again. We didn’t make icing so we added chocolate chips on top and it was delicious. This is a very quick recipe, easy to put together and not much cleanup – especially if you use cupcake papers.

Paleo Double Chocolate Cupcakes

  • 1/4 cup coconut flour
  • 1/4 cup raw cacao powder
  • 1/4 tsp sea salt
  • 1/2 tsp baking soda
  • 4 eggs
  • 1/3 cup maple syrup
  • chocolate chips to top

Preheat oven to 350 degrees. Measure the coconut flour and the cacao powder and sift through a fine mesh strainer, stir together. Add the salt and baking soda and mix together. Add the eggs and maple syrup and mix well. Line cupcake pan with papers and fill each cup half way. Top each cupcake with 4-5 large chocolate chips. Bake 17 minutes.
