Pumpkin Pie Recipe

Pumpkin Pie is one of the requirements at our Thanksgiving table. My husband loves it so much I make it several times even before Thanksgiving arrives. Over the years of experimenting this recipe has been updated and refined so it turns out very well. This recipe is grain-free and dairy-free and if you didn’t know that before trying it you probably wouldn’t notice a difference. The crust is made with almond flour instead of a traditional white flour crust and the cow’s milk has been replaced with coconut milk. The coconut milk works very well and makes this pie very creamy.

For a pie recipe, this one is relatively quick to make. I put this one together in less then an hour including the crust.

Pumpkin Pie

Crust

  • 1 1/2 cups almond flour
  • 1/4 tsp sea salt
  • 1/2 tsp baking soda
  • 1/4 cup coconut oil, melted
  • 2 tablespoons maple syrup
Preheat oven to 350 degrees. Mix all ingredients together and press into a 9″ pie plate. Bake for 10 minutes or until lightly browned. Let cool before filling. While the crust is in the oven, mix together the filling.

Filling

  • 2 cups pumpkin
  • 3 eggs
  • 1 can coconut milk
  • ¾ cup maple syrup
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1 tsp nutmeg
  • ½ tsp allspice
  • Pinch cloves
  • 1 tsp vanilla extract

Preheat oven to 425°. Mix together all ingredients with a mixer or a whisk until blended well. Pour the filling batter into the pre-baked pie crust. Bake in oven for 15 minutes at 425° then reduce temperature to 350° and bake for 40 to 50 minutes or until knife inserted near center comes out clean.

Paleo Cranberry Orange Bread

Last week a friend of ours gave us a big bag of fresh wild cranberries that he picked on a local foraging adventure – how cool is that!  I immediately thought of making cranberry bread which comes out so tasty with fresh cranberries.

Not only are cranberries delicious but they are also packed with health benefits. Cranberries are full of antioxidants, which protects cells from damage by free radicals. If you can get them fresh they will have the most amount of nutrients and health benefits but frozen is an alternative if you can’t get fresh. Some research has shown that cranberries may also help to fight stomach cancer and ulcers, increase levels of HDL, (good cholesterol) and reduce levels of LDL (bad cholesterol) and prevent tumors. Drinking cranberry juice is also a popular remedy for blocking urinary infections.

A low grain or grain-free diet has been working well for me so I wanted to make a grain-free version of this bread. After looking through my recipes files I came up with this recipe and we really enjoyed it…

Cranberry Orange Bread

  • 4 eggs, beaten
  • 1/4 cup coconut oil, melted
  • 1/4 cup canned coconut milk
  • 1/3 cup maple syrup
  • 1/2 cup orange juice
  • 8 drops of Young Living Orange Essential Oil
  • 1 tsp. vanilla extract
  • 1/2 cup coconut flour, sifted
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup fresh cranberries

Preheat oven to 350 degrees.  Mix together the wet ingredients and add the dry ingredients and stir until combined.  Fold in the fresh cranberries.   Pour batter into loaf pan greased with coconut oil.  Bake for 1 hour or until loaf is set and a toothpick comes out clean.

Awesome Grain-free Brownie Recipe

 

Holiday baking is in full swing.  Today I made three pumpkin pies and a batch of these brownies which are so delicious.  This Thanksgiving I am making a lot of grain-free dishes which are coming out very well.  A lot of the recipes I like are based in Almond flour.  Using almond flour instead of grain flour really increases the protein in baked goods which makes it much healthier.  These brownies are very easy to make and you barely even notice there is no real flour in them.  Here is the recipe:

Almond Flour Brownies

Preheat oven to 350 degrees.  Grease a 8×8 square baking pan. In a large bowl combine almond flour, slat, baking soda and cocoa powder and mix together.  In a separate bowl mix together oil, eggs, maple syrup, and vanilla.  Mix wet ingredients into dry ingredients and stir.  Bake for 30 minutes.
