How to Make Homemade Larabars


We love Larabars.They are delicious, satisfying, and are only made with a few whole food ingredients.  The one thing I don’t like is paying $2.00 or more per bar.  They are great to throw in my bag as we run out the door for a emergency snack or to satisfy a sweet tooth without spiking the blood sugar.  Since these bars are only made with a few ingredients I knew they had to be easy enough to duplicate.  Some of the flavors cost more to make then others based on the cost of the nuts but you will save money on all flavors by making them yourself.  The process is very easy since there is no baking involved, all you need is a food processor.  I usually make a big batch at once and wrap them individually in plastic wrap so that we can grab them on the go.  Here are my favorite recipes so far:

Cashew Cookie

Put the dates in a food processor for one minute, empty into a bowl.  Pour the cashews into a food processor and pulse until you get small chunks, you don’t want flour you want it to be nice and chunky.  Add into the bowl with the dates and throw in a pinch of sea salt.  Use your hands to mix and mold into bars.  If the bars are not sticking well because the dates were a little dry, add a small amount of water to make it more sticky.  This recipe makes 5 bars.

Cashew cookie cost analysis:

  • Homemade: Total cost $6.27 / 5 bars = $1.25 per bar
  • Store bought Larabars: $1.99 per bar
  • Total savings: $0.74 savings X 5 bars = $3.70

Almond Cookie

  • 1 cup raw almonds (cost $2.49)
  • 3/4 cup organic pitted dates (cost $2.00)
  • 1/2 tsp vanilla
  • pinch of sea salt

Almond cookie cost analysis:

  • Homemade: Cost $4.49 / 5 bars = $0.89 per bar
  • Store bought Larabars: $1.99 per bar
  • Cost savings: $1.1o X 5 bars = $5.50

Chocolate Coconut

Chocolate Coconut cost analysis:

  • Homemade: cost $4.83 / 5 bars = $0.96 per bar
  • Store bought Larabars: $1.99 per bar
  • Cost savings: $1.03 X 5 bars – $5.15

It is pretty easy to experiement with different flavors for these bars becuase you can see how they come out very quickly and can easily add more of something to tweak the taste.  These snacks are fun and easy to make.  The sweet taste of the dates make them so delicious and since the nuts are chopped up small I don’t worry about choking with little children.
