Simple Summer Real Food Series Recipe # 2

I had an arugula salad at a restaurant recently and loved it so I decided to create my own salad at home. This recipe was something I just threw together with things that I had in the house one day and it came out really tasty. I will surely make this one again. Hope you enjoy.

White Bean & Arugula Salad

  • 1 Leek
  • organic olive oil
  • 1 cup organic cherry tomatoes, halved
  • 3 cups arugula
  • 1 cup white beans, cooked or canned
  • 2 tspn apple cider vinegar
  • salt & pepper to taste

Heat olive oil in pan, saute leek for 1 minute.  Add tomatoes and saute another few minutes.  Turn off the heat and add the arugula and beans, toss together with the vinegar.  Serve at room temperature.

This salad is not only delicious but it’s also really nutritious.  Arugula is high in vitamin A and the beans are a great source of protein and fiber.  White beans are a great food for pregnant women becuase they are high in folate.  This is a nutrient dense meal and is healthy for all diets.
