Simple Summer Real Food Series – Recipe # 1
My husband and I were craving a really good old fashioned potato salad. Since I don't have many cookbooks with me and limited internet access in our summer cottage I created this recipe. This might just be the best potato salad I've ever had. It's so simple and so delicious and it goes with many different dishes. It's a perfect with anything made on the bbq.
Red Bliss Potato Salad
- 6-8 Small organic red bliss potatos
- 2 organic eggs
- 1 organic red onion, diced
- 2 tbsp fresh dill, chopped
- 3 stalks organic celery, chopped
Boil the potatos until soft, cut into quarters. Hard boil the eggs and chop up, add into the bowl with the potatos. Add onion, dill, and celery. Prepare the mayo recipe below and pour onto the potato mixture.
Home Made Mayo
- 1 egg (raw)
- 1/2 teaspoon minced garlic
- 1 tablespoon lemon juice
- 1 teaspoon prepared yellow mustard
- 3/4 cup vegetable or olive oil
- salt and pepper to taste
Combine the egg, garlic, lemon juice and mustard in the container of a blender or food processor. Blend until smooth, then blend on low speed while pouring oil into the blender in a fine stream as the mixture emulsifies and thickens.
