Cauliflower Kale Soup

Ingredients

large head of cauliflower

tbsp.
coconut oil
1
bunch of kale
1
yellow onion
2
stalks celery
4
cloves
garlic
7
cups
vegetable stock or chicken bone broth
Instructions
In a stock pot, heat the coconut oil.
Saute the onion and garlic for 5 minutes.
Add stock and vegetables, bring to a boil.
Simmer for 10 minutes or until vegetables are soft.
Puree with an immersion blender or transfer to a blender to puree.
