This recipe for a healthy zucchini cake is proof that you can bake delicious recipes that are not bad for your health. When I am looking for a new recipe to bake, I usually look around at other recipes first. The majority of dessert recipes have WAY too much sugar. Most cake recipes call for 2 cups of white sugar. To me, that just tastes way too sweet but not only that, it's a lot of sugar! Especially if you are baking for children. If you are used to eating highly sweet dessert recipes, it may take time to wean your taste buds of the super sugar sweet treats but it is worth it! This flavorful cake is just the right amount of sweetness and the cream cheese icing makes it decadent. The cinnamon and raisins also add a lot of flavor. The cake even has hidden veggies that adds to the moist texture.
Healthy Zucchini Cake Recipe
Ingredients
- 2 eggs
- 1/2 cup yogurt
- 1/3 cup butter, melted
- 1/2 cup coconut sugar
- 1 tsp vanilla extract or vanilla powder
- 1 cup zucchini, finely shredded
- 1 2/3 cup Gluten-free all purpose flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 cup raisins
Instructions
- Preheat oven to 350
- Prepare an 8×8 baking pan with parchment paper and spray with oil
- In a large bowl beat together eggs, yogurt, butter, sugar and vanilla
- Add all remaining ingredients and mix until thoroughly combined
- Pour the batter into the prepared baking dish
- Bake 40 minutes, until golden brown
- Once cooked, you can remove from the pan or just ice the cake directly in the pan.

Healthy Cream Cheese Frosting
Ingredients
- 1 8 oz Package of Cream Cheese
- 3 tbsp Butter
- 1/3 cup Maple Syrup
- 1 tbsp Vanilla Extract
Instructions
- Add all ingredients to a vitamix or an electric stand mixer with the whisk attachment and blend until smooth.
